Mole Beef Summertime Veggie Lettuce Wraps
Ingredients:
two portobello mushroom caps, cubed
two zucchini, diced
one Vidalia onion, diced
one long hot greenish pepper, diced
one ear's worth of corn kernels
one lb 90% lean terra firma beef
1/4 loving cup greenish mole sauce*
10-12 leaves greenish leafage lettuce
Directions:
In a large skillet, saute the mushrooms, zucchini, corn, onion too pepper until soft. Add the meat too proceed to saute until almost fully cooked, breaking upwardly whatever large chunks amongst your spoon. Stir inward the mole sauce too laid upwardly until the meat is cooked through. Divide into lettuce leaves too serve.
*I used Mole Verde Almendrado past times La Paloma Gourmet which was awesome too flavorful
