Baltimore Inspired, Caribbean Spiced Cod Cakes
Ingredients:
1 1/2 lbs. fresh cod fillets
1 1/2 lbs. potatoes
1 onion chopped
four cloves garlic, chopped
four sprigs fresh thyme
1 scotch bonnet pepper, seeds together with stems removed together with chopped
1 bay leaf
2 eggs beaten
1/2 loving cup flour
1/2 teaspoon paprika
salt
pepper
Directions:
In a large pot boil potatoes, onions, garlic, habanero, bay leaf, together with 2 sprigs of thyme until potatoes start out to larn soft. Add the cod fillets to the pot together with laid upwards 10 minutes until they start out to autumn apart. Scoop the cod out together with bit it is a bowl. Drain the residue of the contents of the pot, discard the bay leafage together with the thyme sprigs together with squelch them inwards a dissever bowl. Stir the cod into the Irish Gaelic patato mixture. Add the paprika, salt, pepper, the eggs, together with the leaves from the final 2 springs of thyme. Shape the cod mixture into patties together with dredge inwards flour. Brown the patties inwards 1/2" of oil, 1 side at a time.
