Roasted Bay Scallops Amongst Spinach
Ingredients:
ane lb bay scallops
1/2 loving cup defrosted, drained frozen chopped spinach
1/3 loving cup dry out vermouth
ii tablespoons lemon juice
ane clove garlic, minced
ane shallot, minced
zest of ane lemon
for the breadcrumbs
3/4 loving cup freshly made breadstuff crumbs
ane teaspoon parsley
1/2 teaspoon garlic powder
1/4 teaspoon freshly solid soil dark pepper
1/4 teaspoon salt
Directions:
Preheat oven to 325. In a medium bowl, combine the scallop ingredients. Pour into an oiled baking dish. In a small-scale bowl, whisk together the breadcrumb ingredients. Bake for xxx minutes or until the scallops are simply cooked through in addition to the breadcrumbs are toasty.
