Acorn Crush Stuffed Amongst Fruited Wild Rice
Ingredients:
1 acorn squash, halved in addition to seeds removed
1 loving cup cooked wild rice
1 Bosc pear, cubed
1/4 loving cup slivered almonds
1/4 loving cup dried, sweetened cranberries
Directions:
Preheat oven to 400. Line a baking canvas with parchment. Place the acorn squelch on the parchment, flesh-side down. Bake 25 minutes.
Meanwhile, stir together the remaining ingredients inwards a pocket-sized bowl. Evenly split with the cavities of the squash. Bake, flesh-side upward for an additonal twenty minutes or until the squelch is tender. Slice inwards one-half in addition to serve immediately.
Serves: 4
Note: This recipe is easily doubled.
