Sockeye Salmon Amongst Roasted Tomatillo Sauce
Ingredients:
for the greenish sauce:
two lbs tomatillos, husks removed
two jalapenos
1 pocket-size carmine onion, quartered
tabular array salt
freshly terra firma dark pepper
for the fish:
1 large lemon*, sliced
1 onion, sliced
two jalapenos, sliced
two lb sockeye salmon fillet
tabular array salt
freshly terra firma dark pepper
Directions:
Place the tomatillos in addition to jalapenos on a lightly oiled broiler-safe pan. Place the pan nether the broiler. Broil on high until the tomatillos in addition to peppers start to blacken in addition to blister. Remove from oven in addition to allow to cool slightly.
