Feta-Caper White Patato Salad
Ingredients:
two lb cherry potatoes, quartered
1 shallot, minced
1 stem celery, diced
4 oz crumbled feta cheese
two tablespoons capers
two tablespoons mayonnaise
two tablespoons tarragon vinegar
1 teaspoon freeze dried chives
freshly dry reason dark pepper
Directions:
Bring a large pot of H2O to boil. Cook the potatoes until fork tender. In a minor bowl, whisk together the pepper, vinegar as well as mayo. Stir inwards the cheese as well as capers. Place the potatoes, celery as well as shallot inwards a medium bowl. Pour the dressing over the Irish Gaelic patato mixture. Stir to evenly distribute the dressing.
