Pineapple Pecan Snacking Cake
When I was a kid, a meg years ago, "snaking cakes" were all the rage. They were unproblematic recipes you lot mixed upwards past times hand, amongst a bowl too a spoon. This is i of those cracking recipes.
It is moist, sweet, fruity, nutty......and snack-o-licious !!
2 cups flour
2 cups sugar
2 teaspoons baking soda
2 eggs
1 (20 ounce) tin crushed pineapple including juice
1 loving cup chopped pecans (toasted at 350° for v minutes)
1 teaspoon vanilla extract
1 teaspoon kokosnoot extract
Mix the crushed pineapple too juice amongst the eggs, extracts too sugar. Mix well.
Add the flour too baking soda too mix until fully incorporated, exactly don't over-mix. Stir inwards toasted (cooled) pecans.
Pour the batter into a greased too floured nine ten xiii baking pan too bake at 350°F for thirty to 35 minutes. My electrical oven takes thirty minutes. If you lot are using a drinking glass baking dish, cut the oestrus to 325°F. Test for done-ness amongst a toothpick.
Cool baked cake inwards the pan for xv minutes too then plough out. Frost when cake is completely cool.
Frosting
4 ounces of cream cheese (room temperature)
4 ounces of butter (room temperature)
2 cups powdered sugar
1 teaspoon vanilla
1 tablespoon milk
Beat frosting ingredients until creamy too then spread on cooled cake.
