Turkey & Pea Risotto

Ingredients:
v cups turkey stock
two 1/2 cups diced turkey breast
1 loving cup frozen peas
1 onion, finely chopped
1 stem celery, diced
1 carrot, diced
two tablespoons olive oil
two cups Arborio rice
1/3 loving cup grated Parmesan
1/3 loving cup grated smoked Gouda
1 1/2 tablespoons olive oil
1 tablespoon butter
salt
pepper
Directions:
In a saucepan, convey the broth to a simmer. Heat crude too butter inwards a large saucepan Saute the onion, celery too carrot until softened. Add the rice too sauté for 2-3 minutes, stirring continually. Add the broth a 1/2 loving cup at a time, stirring continuously, too waiting until the liquid is absorbed earlier each addition. When y'all are almost one-half fashion through the broth, add together the peas too turkey to the rice. Continue to add together broth too stir. When the risotto is creamy too the rice is al dente take from oestrus too stir inwards the cheeses.
