Butternut Mash Pork Tacos
Ingredients:
two 1/2 lb boneless pork roast
1 1/2 lb (peeled, seeded) butternut squash, cutting into two inch one-half moons*
two jalapenos, sliced
1 onion, sliced
1/4 loving cup ruby-red vino vinegar
1 teaspoon granulated garlic
to serve:
taco sized tortillas
shredded Mexican cheeses
sour cream
hot sauce
lettuce
Directions:
Place the butternut mash inwards the bottom of a four qt deadening cooker. Place the pork on summit the mash in addition to thence scatter the remaining ingredients on top.
