Cherry Cheesecake Pie
Last week, Debbie, over at Mocha Me, posted a raspberry cream cheese pie that sounded quick, slowly together with tasty. It had a chocolate crumb crust, a layer of fresh raspberries, a baked cream cheese filling together with a chocolate drizzle.

On the 24-hour interval I wanted to brand the pie, nosotros were snowed inwards amongst a pes of novel snowfall then I had to improvise on unopen to of the ingredients. The lastly upshot was fantabulous together with I volition live making this versatile recipe often, give cheers y'all Debbie!!
I didn't convey raspberries, then I substituted unopen to frozen night sweetness cherries together with made a cooked filling to instruct nether the cheesecake layer. I'm certain y'all could purpose almost whatsoever fresh, canned or cooked fruit nether the cheesecake layer (it is a rattling user friendly recipe).

CRUST
1¼ cups graham cracker crumbs
3 tablespoons sugar
1/3 loving cup melted butter

Mix all ingredients together with press into a 9" pie plate (no need to grease) together with bake inwards a preheated 350 aeroplane oven for viii minutes. Let cool for xxx minutes (I allow mine cool for almost 10).

FRUIT LAYER
2 cups of fruit (I used frozen night sweetness cherries cutting inwards half).
¼ loving cup sugar
¼ teaspoon almond extract

Cook the fruit & saccharide together until it is tender (the fruit volition brand its ain juice). While its simmering, stir inwards a slurry of i tablespoons of cornstarch mixed amongst i tablespoon of water. Simmer until juices are rattling thick, take from estrus together with stir inwards extract. Pour into bottom of crumb crust together with fix aside.

CREAM CHEESE LAYER
4 ounces of cream cheese (room temperature)
3 tablespoons lemon juice
14 ounce tin of sweetened condensed milk (not evaporated)
1 teaspoon vanilla
1 egg

Beat the cream cheese together with sweetened condensed milk together, add together the lemon juice, vanilla together with egg together with trounce until smooth. Pour over the fruit layer. Bake inwards 350 aeroplane oven for xxx minutes. Let pie cool on a rack for almost xxx minutes earlier y'all chill.

GLAZE
Mix ¼ loving cup of semi-sweet chocolate chips amongst ¼ loving cup heavy whipping cream together with estrus (over depression heat) until the chocolate melts. Drizzle over baked pie. Chill pie for several hours.
NOTE: When chilled, this cuts beautifully.
