Coleen's Ruddy Rice

This recipe is i of my master copy recipes; it is too i that I could in all likelihood "live on" if ask last (I similar it simply that much!!) It is my "go to" recipe when picky-picky hubby is grilling roughly huge slab-o-meat (and I desire something a trivial lighter).

1 loving cup raw white rice (not instant rice)
2 tablespoons canola oil
1/2 cup chopped onion
2 teaspoons chili powder
1 teaspoon reason cumin
1/2 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon dark pepper
15 oz. tin sack diced tomatoes inwards juice
1 love apple tree tin sack of H2O + ½ cup

4 ounce tin sack of mild light-green chili's
1 ruddy bell pepper chopped

1 loving cup ruddy kidney beans

1 pocket-size seeded too diced jalapeno (if you lot dearest extra heat)

Heat the canola oil, thence add together the raw rice, onion too spices. Saute this mixture until the onion is transparent too the rice is opaque. Add the ruddy bell pepper, kidney beans, the whole tin sack of diced tomatoes (plus the juice) addition 1 sum tin sack of H2O too another 1/2 loving cup of H2O too the mild light-green chili's (and jalapeno if you lot are using it....I don't intend it's necessary.

Stir good too choose to a boil.
