Marak Kubbeh Adom (Beet Soup Amongst Meat-Filled Dumplings)




Ingredients:

meat filling:
1 lb lean reason beef
1 onion, finely diced
two cloves garlic, minced
1 bunch parsley, chopped
1 tablespoon ras al hanout, paprika or baharat

4 cups coarse semolina (not flour)*
two cups water


for the soup:
1 onion, chopped
two cloves garlic, minced

1 stem celery, diced
two carrots cutting into 1-1/2 inch chunks
two pocket-size yellowish squash, cubed

8 cups vegetable or chicken stock
juice of 1 lemon


Directions:
