Muffin Poppers
My husbands wintertime business (hobby) is restoring vintage snowmachines. He has a store on our belongings too needless to say, at that spot are days when real footling "restoring" happens because the store is total of his buddies discussing their most recent snowmachine adventures. When the store is full, I savor sending out a large plate of baked goods to teach their persuasion on a novel recipe. Today, I sent these (super easy) footling muffin poppers out too the "guys" hovered over them similar vultures (a practiced sign), the footling gems got a large thumbs up.
2 cups flour
¾ loving cup granulated sugar
2 teaspoons baking powder
¼ teaspoon freshly grated nutmeg
¼ teaspoon cinnamon
1 teaspoon salt
¾ loving cup buttermilk
2 eggs, beaten
1 teaspoon vanilla extract
2 tablespoons melted butter
NOTE: This recipe makes almost iii dozen mini-muffins.

Preheat your oven to 400 too lightly grease/spray a mini-muffin pan amongst vegetable spray.
In a large bowl, mix the dry out ingredients, too then stir inward the buttermilk, eggs, vanilla too melted butter. Beat together until good blended.
Fill mini-muffin cups almost ½ full. Bake inward 400 score oven for 12 to fifteen minutes (my oven took xiii minutes) or until they leap dorsum when touched.
Let the footling muffins cool a infinitesimal or so, too then withdraw them from the pan. Brush all surfaces amongst melted butter too gyre inward cinnamon sugar. Serve warm (but nifty room temperature too).
