Pattypan Mash Bake
Ingredients:
iv medium pattypan squash, sliced into 1/8- 1/4-inch rounds
1/2 white onion, sliced into 1/2-inch half-moons
iii eggs
1/4 (loose) loving cup chiffonade'd* basil
1 1/2 tablespoons milk
bounding main salt
freshly dry soil dark pepper
12 saltines, crumbled
two tablespoons butter, melted
Directions:
Preheat oven to 350. Grease a 9-inch pie plate. Layer the mash together with onion inwards unmarried layers starting together with ending alongside squash. Set aside.
In a modest bowl, trounce together the eggs, basil, milk, tabular array salt together with pepper until fluffy. Pour over the squash.
In a modest bowl, stir together the saltines together with butter until the crackers are good coated. Sprinkle an fifty-fifty layer over the squash. Bake 45 minutes or until the mash is tender.
