Garlic Smashed Potatoes Alongside Bacon
Ingredients:
i lb "baby" Yukon Gold potatoes
i tablespoon butter
two 1/2 tablespoons olive oil
two cloves garlic minced
two slices thick cutting bacon, cooked together with cutting into 1/4 inch pieces
Directions:
Preheat oven to 450. Bring a large pot of salted H2O to boil. Cook the potatoes until fork-tender. Place on a parchment newspaper together with role a spud masher to lightly "smash" each spud until the peel cracks.
In a small-scale pan, estrus the butter together with garlic until the butter melts. Remove from estrus together with stir inward olive oil. Drizzle over potatoes. Bake potatoes fifteen minutes or until crispy. Salt, pepper together with sprinkle amongst bacon bits. Serve immediately.
