Sesame-Feta Chicken Salad
Ingredients: two cups cubed cooked chicken breast handful Italian parsley, chopped 1 “baby” cucumber, diced 1/2 pocket-size reddish onion, diced iii oz crumbled feta (tomato basil flavored if possible) 1 tablespoon nonpareil capers two teaspoons tahini 3-4 tablespoons mayonnaise salt freshly soil dark pepper zest of 1 lemon Directions: Place the chicken, parsley, cucumber, onion, feta, in addition to capers inwards a large bowl. Toss to evenly distribute all ingredients. Set aside. In a pocket-size bowl, whisk together the tahini, mayo, salt, pepper, in addition to zest. Spoon over the chicken mixture in addition to stir to combine. Serve directly or refrigerate upwards to 48 hours. Serving suggestion: I served this on lavash alongside sliced cherry tomatoes.
