Strawberry Thyme Jam
Ingredients:
8 cups finely chopped, hulled strawberries*
iv 1/2 cups sugar
1 box liquid pectin (both packets)
1/4 loving cup lemon juice
zest from i lemon
v springs fresh English linguistic communication thyme
Directions:
Prep jars/lids for canning. Stuff the thyme into a tea ball. Secure it to i side of a large, heavy bottomed pan. Add the strawberries, sugar, lemon juice in addition to zest. Bring to a boil, stirring in addition to breaking upward whatever large chunks alongside the dorsum of a spoon until it begins to trim down in addition to thicken. Use an immersion blender if necessary (my chunks were in addition to hence pocket-size that this wasn't needed) to brand a smoother jam. Stir inwards the pectin. Continue cooking at a depression (rolling) boil for 2-3 minutes or until it looks jammy. Fill the jars leaving 1/4 inch headroom. Process inwards the hot H2O bathroom for 10 minutes.
Yield: 6-7 8-oz jars.
